Anzac Biscuit Recipe

Cook time 10-12 minutes

Serves: 24

INGREDIENTS:

  • 1 cup rolled oats
  • 2 cup plain flour
  • 1 cup sugar
  • 1 cup desiccated coconut
  • 1 tablespoon golden syrup
  • 125g butter
  • 1 teaspoon bicarbonate of soda
  • 1 tablespoon boiling water

METHOD:

  1. Preheat oven to 180 degrees celsius. Combine oats, flour, sugar and coconut in a bowl.
  2. In a saucepan, stir golden syrup and butter over low heat until butter has melted.
  3. Mix bicarbonate of soda and water together, add to the butter mixture and stir.
  4. Pour into the dry ingredients and stir until well combined.
  5. Roll teaspoonfuls of the mixture into balls. Place on trays 5cm apart. Press lightly with fork.
  6. Bake 10-12 minutes or until golden brown.
  7. Enjoy!
